Vineyard: Grapes are harvested from select parcels within the Grand Cru of Les Mesnil-sur-Oger. Average of 30 year old vines. Orientation: Southeast-facing Soil: Chalk and limestone Viticulture: Grapes are hand harvested Vinification: 100% ; fermentation takes place in stainless steel using natural yeasts. 100% malolactic. Aging: Aged in stainless steel. Bottled and allowed to age on the lees for a minimum of 3 years before disgorgement, then aged an additional 3 months.
