After harvest, the grapes are left to sundry until the water evaporates and the sugar is concentrated inside the fruit. The grapes are then pressed and the resulting juice is left to ferment naturally in traditional wooden vats. The wine then ages in old oak barrels in isothermic cellars. Matured and aged in barrels for a minimum of two years before bottling.
