This is a 2020 Pouilly-Fumé from the Loire Valley in France, made from Sauvignon Blanc. It is bottled under the Prestige des Fines Caillottes Kiméride name by Jean Pabiot et Fils.
The Pabiot family estate, Domaine des Fines Caillottes, dates back to the late 19th century. The name sets it apart from the six other Pabiot producers in Pouilly. It is based in the village of Les Loges and run by Alain Pabiot and his son Jerome, the 4th and 5th generations. Their 29 hectares are spread over 5 communes and 30 parcels at around 200 meters above sea level. Soils include limestone with small white pebbles (caillottes), marl with fossilized oysters, and flint. The vineyards are certified Terra Vitis and farmed sustainably with no synthetic fertilizers. The Pabiots green-harvest regularly, sometimes removing up to half the fruit, and plow vine cuttings into the soil.
