This is a 2021 white Bourgogne from Domaine Huber-Verdereau, made from Chardonnay in Burgundy. Barrel ageing for the generic Bourgogne wines at the domaine is short, 8 to 10 months, and the domaine uses little new oak.
Thiébault Huber founded the domaine in 1994 on family land in Volnay, where the Verdereau family had grown vines since the 19th century. He is Alsatian on his father's side and Burgundian on his mother's, and he worked for Marcel Deiss and as a sommelier before returning to Burgundy. The domaine now covers a little over 9 hectares in 7 communes. He banned chemical fertilizers and herbicides from the start, began organic conversion in 2001 and biodynamic farming in 2005, and the vineyard is certified by Demeter and Ecocert. In the cellar he prefers infusion to extraction, avoids pumping and lees stirring, and makes his own natural sulfites.
