The vintage
The year begins early with a bud blooming taking place 4 days ahead of schedule, compared to 2005. The first leaves appear on the 1st of April.
The spring was well balanced, between rainy and long sunny periods.
The flowering is homogeneous, between the 28th of May and the 7th of June.
July and August months are rainy, with cool temperatures; however, early septembre is very hot, and the second fortnight very rainy.
In these conditions, the harvest begins on the 22nd of septembre and end up on the 6th of octobre.
The harvest conditions are very good: beautiful sunshine, sane grapes, manual selection and scratch.
The cuvée
Chérubin 2006 is composed of 67% of merlot and 33% of cabernet grapes.
The fermentations were quite long, with smooth wine pumpings over and down.
The wine fermentation lasted 26 days.
Then, the wine has been put into brand new barrels, in which took place the malolactif fermentations.
The ageing took 15 months, and the bottling was done in May 2008.
The tasting
The wine distinguishes itself by its beautiful black cherry colour and its powerful aromas of blackberry jam and spices (vanilla, cinnamon).
The subtle, rounded and tasty palate is structured by persistant tannins. An excellent wine for the next decade.
